Emiliano Falsini was born and raised in Tuscany, Italy. He graduated in Viticulture and Oenology from the University of Florence before continuing his studies with specialist oenology training at the University of Bordeaux. Through his work as a consultant with the Matura Group, he has gained extensive international experience, while in Italy he works closely with leading producers including Graci, Girolamo Russo and Giacomo Fenocchio.

Falsini’s personal project focuses on small-scale production from selected vineyard sites. In Tuscany, he works with Cabernet Franc sourced from Castagneto Carducci on the Tuscan Coast. The vineyards sit at approximately 100–120 metres above sea level and are planted to vines of around 30 years of age. The wines are produced through parcel-by-parcel vinification with spontaneous fermentation using indigenous yeasts.

Il Debbio is made from selected Cabernet Franc parcels and is vinified separately before ageing in a combination of cocciopesto amphora (58%) and oak barrels (42%). The wine shows a clear varietal profile with freshness and mineral character. Limite Costa Toscana is produced from a selection of the best grapes and follows the same approach of separate parcel vinification and spontaneous fermentation. It is aged in small oak barrels, resulting in a wine of structure, concentration and varietal definition. Both wines are 100% Cabernet Franc and reflect a sitefocused approach, with an emphasis on precision in both vineyard selection and winemaking.
